Banana Quinoa Bread

1/2 cup spelt flour
1/2 cup quinoa flakes or rolled oats (processed in food processor until flour forms)
2 tsp baking powder
1 tsp baking salt
1/2 tsp salt
3 Tbsp unsweetened applesauce or honey
2 very ripe bananas
2 eggs
Stir in one of the following:
 1/2 cup dried cranberries
 1/2 cup raisins
 1/2 cup chopped nuts

~ Heat oven to 400 degrees
~ Mix together flour, quinoa flakes, baking powder, baking soda and salt in large bowl
~ In separate bowl, mix applesauce, bananas and eggs
~ Mix dry and wet ingredients together just until moist
~ Stir in cranberries, raisins or nuts
~ Pour into a greased loaf pan and bake 25-30 minutes or until knife inserted in the center
    comes out clean
